Making a perfect pancake isn't as easy as it first appears. There are a few "tricks of the trade" we've learned over the years. Some we'd like to share with you... some we intend to keep secret. The first thing that is important is having the right ingedients... all fresh of course. We have all our flours milled fresh for us to our own specifications, our eggs are free-range for health and taste and we whip the butter and cream in our own kitchens to the perfect consistency. And we import our Pure Maple Syrup. Perfect Pancakes. The colour, the consistency and of course the taste of syrup from Vermont is quite unlike that from any other area. We know because we've tasted syrup from many other places. They just don't compare. We also have jars of syrup on sale in our restaurants for those customers who insist on having the best at home as well. For this, we have to thank a good friend and regular customer, Leon Dubrinski. Every time Leon came into the restaurant at Market Lane in the city, he'd tell us the same story about his grandmother's blintzes. He'd go on and on describing the taste, he'd tell us some of the ingredients, but he wasn't too sure about others. A plate of our unbeatable Russian Blintzes. Then one day Harry turned up with the recipe written in Grandma Dubrinski's own handwriting. The very next day we sat down with Harry and served up big plates of authentic Russian Blintzes, just like Grandma used to make.
